Plantain flour is dried plantain, milled fine. In Cameroon it is best known as the base for fufu, but it also stands in for all-purpose flour in baking, and it goes into baby food.
How it's made

Plantain comes in from farms in our network.
The plantain is dried until it is ready to mill.
